Pinto bean

 

Pinto beans or frijoles are a variety of common bean (Phaseolus vulgaris, Fabaceae). They are a common bean in the southwestern United States and Mexico. As well as being high in protein, they are an excellent source of iron, potassium, selenium, and folate.

Dry beans will keep indefinitely if stored in a dry place, but cooking time will increase as beans age beyond one year.

The pinto bean is one of the official state vegetables of New Mexico.
